Lovely Lemon and Vanilla Cupcakes

Lately, the kitchen has definitely been one of my happy places. I’m not really into cooking. Yes, I can boil pasta and fry an egg but what I really love is baking biscuits and cupcakes. Today I’m sharing my favourite cupcake recipe with you. I made them yesterday and put a twist to the traditional butter icing… I added lemon juice to give it a bit of tang! Here’s how I made them.


You will need:

2 eggs

1/2 cup of sugar

1/4 cup of oil

2/3 cup of self-raising flour

2/3 teaspoon of baking powder

1/4 cup of boiling water

1 teaspoon of vanilla essence/extract


  1. Pre-heat your oven to 180°/C.
  2. Beat the eggs, sugar and vanilla essence until creamy.
  3. Fold in the sifted dry ingredients.
  4. Add the oil and stir well.
  5. Add the water and stir well.
  6. Pour batter into lined muffin tray
  7. Bake for 10-15 minutes (at 180°/C).
  8. Leave to cool before icing.


You will need:

Icing sugar



Yellow food colouring

Lemon juice


  1. Sift the icing sugar into a mixing bowl and add in the butter.
  2. Mix well and pour in the hot milk. Stir well.
  3. Add milk until the consistency is right.
  4. Add the lemon juice. (The amount you add depends on how lemon-y you want the icing to be).
  5. Lastly add the food colouring.
  6. Spread onto cooled cupcakes.

This recipe makes about 18 cupcakes

These cupcakes were so yummy! If you’re not sure what to bake, these are definitely worth a shot!

The Creamery: DOCUMENTED

I recently visited The Creamery Ice Cream and Dessert Café in Newlands. While I was there, I chatted to Katy-Rose, a manager there, and I learnt lots about the business and how it all started. So here it goes…

Back To The Roots

The Creamery was started in 2010 by Kate Schrire, who wanted to teach people about sustainable farming in a fun way, and she chose ice-cream to do this. All the ingredients used in the products are sourced locally from farmers or people who make home-made goods. If they for some reason cannot be sourced locally, The Creamery pairs up with farmers who source the products themselves. The business is very experimental and new flavours are always being tried and tested. Customers are generally willing to taste new flavours making it easy to see which ones work.

Decor Inspiration

The Creamery is very much inspired by dessert cafes in the USA such as Jeni’ Splendid. The décor is cool and quirky. Much of the décor, such as the bar stools, fridges and coffee machines are The Creamery’s signature colour, Creamery Green.

Where To Find Them

There are a handful of dessert cafes and stalls where you can find The Creamery. (The Creamery is Cape-Town based at the moment). They include Newlands Dessert Café (flagship store), Salt River Dessert Café (head office), the V&A Market On The Wharf, The Biscuit Mill on Saturday mornings and the lunch time market at the St Georges Mall on a Thursday. Look out for them at their new Mouille Point Café, opening soon!

There is also a range of take-home products so that you can enjoy the ice-cream at home too! There are plans to expand these exciting products too.





The Flavour Of The Month Campaign started in March 2015. It is selected as the most interesting, exciting, out-there flavour. There are many interesting flavours that have made an appearance at The Creamery! They include Cookie-Dough, Carrot-Cake, Blackberry Cheesecake, Strawberry and Bazil, Butternut and Toasted Marshmellow, and Rosetta Roasted Coffee to name a few.

The Creamery is a family and community orientated business. Their aim isn’t just to make money, but to be a part of communities and families.
