Choc-Coffee Loaf Cake with Pistachios

Over this weekend, I was really feeling for chocolate cake. So out came the Kenwood mixer and on went the oven, but I decided that I wanted to try something different. And so, I decided to make this cake!

You will need:

  • 2 eggs
  • 1/2 cup of sugar
  • 1/4 cup of oil
  • 2/3 cup of self raising flour
  • 2/3 teaspoon of baking powder
  • 1 tablespoon cocoa
  • 1/4 cup boiling water (with a teaspoon of coffee)
  • A handful of pistachios for the top

Method

  • Pre-heat your oven to 180ยบ/C
  • Beat the eggs and sugar
  • In a different bowl, sift the dry ingredients
  • Mix the dry ingredients into the eggs and sugar
  • Add the oil and mix well
  • Add the coffee
  • Pour into a greased loaf tin and bake for 20-25 minutes or until baked through
  • Top with icing and pistachios

This cake is so yummy and it’s perfect for a weekend treat as its just enough to eat before the week starts again. Lately, I’ve been so inspired, but not in a way that I just want to make stuff. I want to explore! There’s SO much creativity here in Cape Town and its so exciting to discover! The Design Indaba is coming up soon and I’m really hoping to pop in there.

Peanut Butter Bomb Cookies

What a wonderfully busy time this has been for me! Although,the holidays have been wonderful and relaxing for me, hope yours have been too!

I love peanut butter cookies and so does my family. This is a recipe I swear by! I found a recipe in a kids cookbook, tweaked it up, changed quantities here and there and landed up with this perf’ recipe.ย I baked a batch for a road trip a few weeks back, and I was so busy that I totally forgot to take a snap for this post. Anyways…

You will need:

  • 125g butter
  • 1/4 cup caster sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla essence
  • 1/2 cup peanut butter
  • 2 cups cake flour
  • 4 tablespoons Maizena
  • 1 teaspoon baking powder
  • pinch of salt

Method

  1. Preheat oven to 180ยฐ/C
  2. Cream butter and sugars together
  3. Add the egg, vanilla essence and peanut butter
  4. Beat until fluffy
  5. Sift in the dry ingredients
  6. Mix mixture well together
  7. Spoon onto a greased baking tray
  8. Bake for 10-15 minutes or until the bottom of aย cookie is golden brown
  9. Leave to cool

If your mixture is the right consistency to roll out and use cookie cutters to make the biscuits, then you can obviously give that a shot too!

Choc-Chip and Oat Cookies

My exams are finally over and it feels so great to just be able to do whatever I like. I’ve been planning to post this for a while, but naturally, in between studying and school, I didn’t have much free time to blog. But hey, it’s almost holiday time and I have some really cool posts planned that I’m looking so forward to sharing with you.

A little while back I tried this really great cookie recipe and they were SO yum, so I thought I just had to share.

You will need:

  • 1/2 cup of butter
  • 1/2 cup of brown sugar
  • 1/2 cup of caster sugar
  • 1 cup of cake flour
  • 1 1/4 cup oats
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 50g of chocolate (you can substitute it will nuts, or sweets. Anything really)

Method:

  • Preheat your oven to 180ยฐ/c
  • Cream butter and sugar together
  • Next, add the egg and beat well
  • Seperately, add the flour to oats, baking powder and bicarb
  • Add the butter and chocolate
  • Spoon onto ย a greased baking tray
  • Bake for 8-10 minutes (time may vary depending on how big they are)

Mini Doughnut-Waffles

I am in the midst of exams at the moment and decided to do a little post that’s super-yum just to chill.

Here’s a really easy waffle recipe I found and absolutely love! I poured the batter into a mini doughnut machine to make mini waffle doughnuts, but you could always just go traditional and use a waffle iron.

You will need:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons of brown sugar
  • 2 beaten eggs
  • 1 teaspoon of vanilla essence (I prefer vanilla extract)
  • 1 1/2 cups of milk
  • 1/4 cup of cooking oil

Method

  • Combine all dry ingredients
  • Make a well in the centre and add the eggs, vanilla essence and milk
  • Add the oil and stir until everything is combined
  • Pour into waffle iron/ doughnut machine and bake!

These are super yummy!

I am also super-excited because I wrote a letter to Ideas magazine and they published it!

Fuss-Free Pancakes

In my family, my dad is known for the amazing steak he cooks, my mom I known for her to-die-for cheesecake and I am known for my pancakes (if I may say so myself). I love everything about pancakes from making them right until eating them up.ย  Today Iโ€™ll be sharing my pancake recipe with you.

Ingredients

  • 1 egg
  • 1 ยฝ tablespoons of sugar
  • a pinch of salt
  • ยพ cup milk
  • 1 cup of cake flour (Iโ€™ve used self-raising flour too, and it still tastes great!)
  • 1 teaspoon of vanilla extract (You could also use vanilla essence but extract smells way better and has a richer flavour.

Method:

  1. Add egg and sugar in a bowl and whisk well.
  2. Add in milk, water and vanilla extract and whisk again.
  3. Add in flour and salt and mix until there are no lumps in the mixture.
  4. Add butter to a hot pan and pour in mixture.
  5. Fry until golden brown on each side and cooked all the way through.
  6. Enjoy!

One of my favourite books of all time is Pippi Longstocking by Astrid Lindgren. I fell in love with Pippi and the beautiful illustrations by Lauren Child when I first read the book. (Pippi loves baking too…)

Lovely Lemon and Vanilla Cupcakes

Lately, the kitchen has definitely been one of my happy places. I’m not really into cooking. Yes, I can boil pasta and fry an egg but what I really love is baking biscuits and cupcakes. Today I’m sharing my favourite cupcake recipe with you. I made them yesterday and put a twist to the traditional butter icing… I added lemon juice to give it a bit of tang! Here’s how I made them.

Cupcakes

You will need:

2 eggs

1/2 cup of sugar

1/4 cup of oil

2/3 cup of self-raising flour

2/3 teaspoon of baking powder

1/4 cup of boiling water

1 teaspoon of vanilla essence/extract

Method:

  1. Pre-heat your oven to 180ยฐ/C.
  2. Beat the eggs, sugar and vanilla essence until creamy.
  3. Fold in the sifted dry ingredients.
  4. Add the oil and stir well.
  5. Add the water and stir well.
  6. Pour batter into lined muffin tray
  7. Bake for 10-15 minutes (atย 180ยฐ/C).
  8. Leave to cool before icing.

Icing

You will need:

Icing sugar

Butter

Milk

Yellow food colouring

Lemon juice

Method:

  1. Sift the icing sugar into a mixing bowl and add in the butter.
  2. Mix well and pour in the hot milk. Stir well.
  3. Add milk until the consistency is right.
  4. Add the lemon juice. (The amount you add depends on how lemon-y you want the icing to be).
  5. Lastly add the food colouring.
  6. Spread onto cooled cupcakes.

This recipe makes about 18 cupcakes

These cupcakes were so yummy! If you’re not sure what to bake, these are definitely worth a shot!

Dreamy Coffee Chocolate Icing

Last week I posted my favourite cupcake recipe but I didn’t add how to make the icing. For me icing is one of those things that I never really follow a recipe for, but here’s what I used to make the icing.

  • Icing sugar (1 cup)
  • Butter (add amount depending on the consistency you want)
  • Milk (add amount depending on the consistency you want)
  • 3 tablespoons of coffee
  • 2 tablespoons of cocoa

You have to stir the icing very vigorously to ensure that no lumps form. Ice the cakes using a piping bag or bottle or just spread it on with a butter knife.
