Peanut Butter Bomb Cookies

What a wonderfully busy time this has been for me! Although,the holidays have been wonderful and relaxing for me, hope yours have been too!

I love peanut butter cookies and so does my family. This is a recipe I swear by! I found a recipe in a kids cookbook, tweaked it up, changed quantities here and there and landed up with this perf’ recipe. I baked a batch for a road trip a few weeks back, and I was so busy that I totally forgot to take a snap for this post. Anyways…

You will need:

  • 125g butter
  • 1/4 cup caster sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla essence
  • 1/2 cup peanut butter
  • 2 cups cake flour
  • 4 tablespoons Maizena
  • 1 teaspoon baking powder
  • pinch of salt

Method

  1. Preheat oven to 180°/C
  2. Cream butter and sugars together
  3. Add the egg, vanilla essence and peanut butter
  4. Beat until fluffy
  5. Sift in the dry ingredients
  6. Mix mixture well together
  7. Spoon onto a greased baking tray
  8. Bake for 10-15 minutes or until the bottom of a cookie is golden brown
  9. Leave to cool

If your mixture is the right consistency to roll out and use cookie cutters to make the biscuits, then you can obviously give that a shot too!
