Lovely Lemon and Vanilla Cupcakes

Lately, the kitchen has definitely been one of my happy places. I’m not really into cooking. Yes, I can boil pasta and fry an egg but what I really love is baking biscuits and cupcakes. Today I’m sharing my favourite cupcake recipe with you. I made them yesterday and put a twist to the traditional butter icing… I added lemon juice to give it a bit of tang! Here’s how I made them.

Cupcakes

You will need:

2 eggs

1/2 cup of sugar

1/4 cup of oil

2/3 cup of self-raising flour

2/3 teaspoon of baking powder

1/4 cup of boiling water

1 teaspoon of vanilla essence/extract

Method:

  1. Pre-heat your oven to 180°/C.
  2. Beat the eggs, sugar and vanilla essence until creamy.
  3. Fold in the sifted dry ingredients.
  4. Add the oil and stir well.
  5. Add the water and stir well.
  6. Pour batter into lined muffin tray
  7. Bake for 10-15 minutes (at 180°/C).
  8. Leave to cool before icing.

Icing

You will need:

Icing sugar

Butter

Milk

Yellow food colouring

Lemon juice

Method:

  1. Sift the icing sugar into a mixing bowl and add in the butter.
  2. Mix well and pour in the hot milk. Stir well.
  3. Add milk until the consistency is right.
  4. Add the lemon juice. (The amount you add depends on how lemon-y you want the icing to be).
  5. Lastly add the food colouring.
  6. Spread onto cooled cupcakes.

This recipe makes about 18 cupcakes

These cupcakes were so yummy! If you’re not sure what to bake, these are definitely worth a shot!
